Keto Buttermilk Biscuits

They’re rich, buttery, and have that subtle tang of buttermilk that makes every bite melt in your mouth. Dry Ingredients:

  • 2 cups almond flour

  • 1 tablespoon baking powder

  • ½ teaspoon salt

  • ¼ teaspoon garlic powder (optional, for savory flavor)

Wet Ingredients:

  • 2 large eggs

  • ¼ cup melted butter (or coconut oil for dairy-free option)

  • ¼ cup heavy cream

  • ¼ cup unsweetened almond milk

  • 1 teaspoon apple cider vinegar (to mimic buttermilk tang)

Optional Add-Ins:

  • ¼ cup shredded cheddar cheese for cheesy biscuits

  • 1 tablespoon chopped chives or parsley for a herbed twist

1. Preheat the oven:
Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Make the “buttermilk”:
In a small bowl, combine the almond milk and apple cider vinegar. Let it sit for 5 minutes — it will curdle slightly and create a keto-friendly “buttermilk.”

3. Mix the dry ingredients:
In a large bowl, whisk together the almond flour, baking powder, salt, and (if using) garlic powder. This helps evenly distribute the leavening and seasoning.

4. Combine wet ingredients:
In a separate bowl, whisk together the eggs, melted butter, heavy cream, and prepared “buttermilk.”

5. Create the dough:
Pour the wet ingredients into the dry mixture and stir until just combined. The dough will be thick and slightly sticky — that’s perfect. If you’d like, fold in shredded cheese or herbs at this stage.

6. Shape the biscuits:
