Servings: 4
Prep time: 10 min
Cook time: 15–20 min

  • 1 lb (450 g) chicken breast, finely chopped or ground

  • 1 cup shredded mozzarella cheese (or cheddar)

  • 2 large eggs

  • 1/4 cup almond flour (or coconut flour for nut-free option)

  • 2 tbsp mayonnaise or sour cream (adds juiciness)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 tsp paprika (optional for color/flavor)

  • Salt & pepper to taste

  • 2 tbsp olive oil or avocado oil for frying

👩‍🍳 Instructions

  1. Prepare the chicken mixture:
In a mixing bowl, combine chopped chicken, shredded cheese, eggs, almond flour, mayo, and seasonings. Mix well until evenly combined.

  2. Form fritters:
Scoop about 2 tablespoons of the mixture and shape into small patties or fritters.

  3. Heat the pan:
Add oil to a large skillet over medium heat.

  4. Cook fritters:
Place fritters in the hot pan (don’t overcrowd). Cook for 3–4 minutes per side, until golden brown and cooked through (internal temp 165°F / 74°C).

  5. Drain & serve:
Transfer to a paper towel–lined plate to remove excess oil.

🍽️ Serving Suggestions

  • Serve with ranch, garlic aioli, or sugar-free ketchup.

  • Pair with a side salad, cauliflower mash, or zucchini fries.

💡 Tips

  • You can add chopped spinach or herbs for extra flavor.

  • For baking instead of frying: bake at 400°F (200°C) for about 20 minutes, flipping halfway.
