Keto Cheesy Zucchini Fritters

Ingredients

  • 2 medium zucchini (about 2 cups grated)

  • 1 teaspoon salt (for drawing out moisture)

  • 1 large egg

  • 1/2 cup shredded mozzarella cheese

  • 1/4 cup grated Parmesan cheese

  • 1/4 cup almond flour

  • 1 clove garlic, minced (or 1/2 teaspoon garlic powder)

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon dried oregano (optional)

  • 2–3 tablespoons olive oil or avocado oil for frying

Optional add-ins:

  • 1 tablespoon chopped fresh parsley

  • 2 tablespoons chopped green onions

  • Pinch of red pepper flakes


Instructions

  1. Grate and drain the zucchini
    Grate zucchini using the coarse side of a box grater.
    Place in a bowl and sprinkle with 1 teaspoon salt.
    Let sit for 10 minutes to draw out moisture.

Transfer zucchini to a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. This step is very important to prevent soggy fritters.

  1. Make the batter
    In a large bowl, combine:

  • Drained zucchini

  • Egg

  • Mozzarella

  • Parmesan

  • Almond flour

  • Garlic

  • Black pepper

  • Oregano (if using)

Mix until fully combined. The mixture should hold together when pressed. If too wet, add 1–2 tablespoons more almond flour.

  1. Heat the pan
    Heat oil in a large skillet over medium heat.
    Do not let the oil smoke.

  2. Form the fritters
    Scoop about 2 tablespoons of mixture per fritter.
    Flatten gently in the pan to about 1/2 inch thick.

  3. Cook
    Cook 3–4 minutes per side until golden brown and crispy.
    Flip carefully using a thin spatula.

Transfer to a plate lined with paper towels.

  1. Serve
    Serve warm for best texture.

Tips for Crispy Fritters

  • Squeeze zucchini very well. Excess water causes sogginess.

  • Cook on medium heat so the inside cooks before the outside burns.

  • Do not overcrowd the pan.

  • For extra crispiness, add 1 tablespoon grated Parmesan on top of each fritter while cooking.


Air Fryer Method

Preheat air fryer to 375°F (190°C).
Lightly spray fritters with oil.
Cook 8–10 minutes, flipping halfway, until golden and firm.
