Keto Cream Cheese Sticky Cake Bars

These keto cream cheese sticky cake bars are inspired by classic gooey butter cake, but they use low-carb ingredients to keep the recipe keto-friendly while maintaining the indulgent taste and texture. The dessert features a tender almond-flour crust that acts as a sturdy base for the rich layer above. Once baked, the crust becomes slightly firm and buttery, offering a satisfying contrast to the creamy topping. Each bite combines structure and softness in a way that feels surprisingly close to traditional sticky cake.

The top layer is made from cream cheese, eggs, melted butter, and keto-friendly sweetener, creating the signature “sticky,” gooey texture. As it bakes, the mixture stays soft in the center while firming around the edges, forming a custard-like layer that melts into the crust below. Vanilla enhances the flavor, giving the bars a warm, bakery-style aroma. When chilled, the bars slice easily but retain their creamy interior, making them ideal for a decadent snack or dessert.

These bars are versatile enough to be adapted to different dietary needs or flavor variations. They can be made richer with additional cream cheese, lighter by reducing the butter, or flavored with lemon zest, cinnamon, or cocoa powder. Despite their indulgent character, they remain very low in carbs because they rely on almond flour instead of wheat and use sugar substitutes instead of traditional sugar. This makes them suitable for keto, low-carb, and gluten-free lifestyles without sacrificing taste.

Keto cream cheese sticky cake bars store exceptionally well and often taste even better the next day as the layers set more fully. They can be enjoyed chilled, at room temperature, or slightly warmed for an even softer texture. Their firm edges and creamy center make them a crowd-pleasing dessert for gatherings, and they hold up well during transport. Whether enjoyed as a casual treat or served as a special dessert, these bars deliver classic gooey-butter-cake flavor with keto-friendly ingredients.
