Ingredients

Protein Base

  • 1 lb (450 g) ground beef (or ground turkey)
  • 1 tbsp olive oil or butter

Vegetables

  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 green bell pepper, diced
  • 1 small jalapeño, chopped (optional)
  • 1 can (10 oz / 280 g) diced tomatoes with green chilies (like Rotel)

Broth & Creamy Base

  • 3 cups beef broth (low sodium)
  • 1 cup heavy cream
  • 4 oz (115 g) cream cheese, softened

Seasonings

  • 2 tbsp taco seasoning (sugar-free)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp oregano
  • Salt and pepper to taste

Cheese

  • 1 cup shredded cheddar cheese
  • 1/2 cup mozzarella or Monterey Jack cheese (optional)

Optional Toppings (Keto-Friendly)

  • Avocado slices
  • Sour cream
  • Fresh cilantro
  • Crushed pork rinds (as tortilla chip substitute)
  • Jalapeño slices
  • Lime wedges

Equipment

  • Large soup pot or Dutch oven
  • Wooden spoon or spatula

Instructions

Step 1: Brown the Meat

  1. Heat oil or butter in a large pot over medium heat.
  2. Add ground beef.
  3. Cook until browned, breaking it apart.
  4. Drain excess fat if needed.

Step 2: Add Aromatics

Add:

  • Onion
  • Garlic
  • Bell pepper
  • Jalapeño (if using)

Cook 4–5 minutes until softened.


Step 3: Add Seasonings

Stir in:

  • Taco seasoning
  • Cumin
  • Chili powder
  • Smoked paprika
  • Oregano
  • Salt and pepper

Cook 1–2 minutes to toast spices.


Step 4: Add Liquids

Pour in:

  • Diced tomatoes with chilies
  • Beef broth

Stir well and bring to a gentle simmer.

Simmer 10–15 minutes.


Step 5: Make it Creamy

  1. Lower heat to medium-low.
  2. Add cream cheese.
  3. Stir until fully melted and smooth.
  4. Add heavy cream.

Mix until soup becomes rich and creamy.


Step 6: Add Cheese

  1. Stir in shredded cheddar.
  2. Let melt into soup.
  3. Adjust thickness with more broth if needed.

Step 7: Final Simmer

Simmer 5 more minutes to combine flavors.


Step 8: Serve

Ladle into bowls and top with:

  • Cilantro
  • Jalapeños
  • Pork rinds for crunch
  • Lime juice squeeze
