🍳 Keto Egg Bites (Low-Carb, High-Protein)

Ingredients

Base:

  • 6 large eggs

  • ¼ cup heavy cream

  • 2 oz cream cheese, softened

  • ½ cup shredded cheese (cheddar, Swiss, Monterey Jack, or mozzarella)

  • Salt & pepper to taste

Keto Add-ins (choose 1–3):

  • 3 slices cooked bacon, crumbled

  • ½ cup spinach, chopped

  • ¼ cup diced bell peppers

  • ¼ cup diced onions

  • ½ cup mushrooms, chopped and sautéed

  • ¼ cup diced ham

  • 1 small jalapeño, finely diced

  • 2 tbsp chopped chives


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin pan or use silicone liners.

  2. In a bowl or blender, mix eggs, heavy cream, cream cheese, salt, and pepper until smooth.

  3. Stir in shredded cheese and chosen add-ins.

  4. Pour mixture evenly into muffin cups, filling ¾ full.

  5. Bake 18–22 minutes, until the centers are set but still soft.

  6. Cool 5 minutes, then remove and store.

    • Refrigerate up to 4 days

    • Freeze up to 2 months
