Keto Garlic Butter Shrimp Roll-Ups

Ingredients

Shrimp Filling

  • 1 lb (450 g) large raw shrimp, peeled and deveined

  • 3 tbsp unsalted butter

  • 4 cloves garlic, finely minced

  • 1/2 tsp smoked paprika

  • 1/4 tsp red pepper flakes (optional)

  • Salt and black pepper, to taste

  • 1 tbsp fresh lemon juice

  • 1 tbsp chopped fresh parsley

Roll-Ups (choose one option)

Option 1: Zucchini (lighter)

  • 2 large zucchini, sliced lengthwise into thin strips

Option 2: Cheese wraps (very keto)

  • 6–8 slices provolone or mozzarella cheese

Optional Add-ins

  • 2 tbsp cream cheese (extra richness)

  • 2 tbsp grated Parmesan

  • 1 tsp Italian seasoning


Equipment

  • Large skillet

  • Mandoline or sharp knife

  • Baking sheet (if using cheese wraps)

  • Toothpicks


Instructions

Step 1: Prepare the Zucchini (if using)

  1. Slice zucchini lengthwise into thin strips (about 1/8 inch thick).

  2. Lightly salt both sides and let sit for 10 minutes to release moisture.

  3. Pat dry thoroughly with paper towels.

  4. Optional: Grill or pan-sear strips for 30–45 seconds per side to make them pliable.


Step 2: Cook the Shrimp

  1. Heat a large skillet over medium heat.

  2. Add butter and let it melt.

  3. Add garlic and sauté for 30 seconds until fragrant (do not brown).

  4. Add shrimp, smoked paprika, red pepper flakes, salt, and pepper.

  5. Cook shrimp 2–3 minutes per side until pink and opaque.

  6. Remove from heat, stir in lemon juice and parsley.

  7. Chop shrimp into bite-sized pieces.


Step 3: Make the Filling

  1. In a bowl, combine chopped shrimp with:

    • Cream cheese (if using)

    • Parmesan

    • Italian seasoning (optional)

  2. Mix until evenly coated.


Step 4: Assemble the Roll-Ups

Zucchini Version

  1. Lay out zucchini strips.

  2. Spoon shrimp mixture onto one end.

  3. Roll tightly and secure with toothpicks.

Cheese Wrap Version

  1. Preheat oven to 375°F (190°C).

  2. Place cheese slices on parchment-lined baking sheet.

  3. Bake 5–7 minutes until melted and slightly golden.

  4. Let cool 1 minute until pliable.

  5. Add shrimp filling and roll carefully.


Step 5: Final Garlic Butter Drizzle (Highly Recommended)

  1. Melt 2 tbsp butter in a small pan.

  2. Add 1 clove minced garlic, cook 20 seconds.

  3. Drizzle over roll-ups before serving.


Serving Suggestions

  • Serve with cauliflower mash or keto garlic bread

  • Garnish with extra parsley and Parmesan

  • Great as an appetizer or main dish


Storage & Reheating

  • Store in airtight container up to 2 days

  • Reheat gently in skillet or oven at 300°F to avoid rubbery shrimp
