Ingredients

Chicken

  • 500 g boneless, skinless chicken thighs or chicken breast, cut into thin strips

  • 1 tablespoon soy sauce or tamari

  • 1 teaspoon sesame oil

  • ½ teaspoon black pepper

  • ½ teaspoon garlic powder

  • 1 teaspoon cornstarch substitute (optional for light coating; almond flour or omit for strict keto)


Stir-Fry Vegetables

  • 250 g fresh green beans, trimmed

  • 1 tablespoon avocado oil or olive oil

  • 4 cloves garlic, finely minced

  • 1 teaspoon fresh ginger, grated (optional but recommended)

  • 2 green onions, sliced


Savory Keto Pan Glaze

  • 2 tablespoons soy sauce or tamari

  • 1 tablespoon rice vinegar or apple cider vinegar

  • 1 tablespoon sugar-free sweetener (erythritol, monk fruit, or similar)

  • ½ teaspoon sesame oil

  • ¼ cup chicken broth

  • ½ teaspoon xanthan gum (for thickening)


Optional Garnish

  • Sesame seeds

  • Chili flakes

  • Extra green onions


Step-by-Step Instructions

1. Marinate the chicken

In a bowl combine:

  • Chicken strips

  • Soy sauce

  • Sesame oil

  • Black pepper

  • Garlic powder

Mix well and let marinate for 10 minutes while preparing other ingredients.


2. Prepare the pan glaze

In a small bowl whisk together:

  • Soy sauce

  • Vinegar

  • Sugar-free sweetener

  • Chicken broth

  • Sesame oil

Set aside. The xanthan gum will be added later.


3. Cook the green beans

  1. Heat ½ tablespoon oil in a large skillet or wok over medium-high heat.

  2. Add green beans.

  3. Stir-fry for 4–5 minutes until bright green and slightly blistered but still crisp.

  4. Remove from pan and set aside.


4. Cook the chicken

  1. Add remaining oil to the pan.

  2. Add marinated chicken in a single layer.

  3. Cook 3–4 minutes per side until golden brown and fully cooked.

Avoid overcrowding the pan to allow good browning.


5. Add aromatics

Reduce heat slightly and add:

  • Minced garlic

  • Grated ginger

Cook for 30 seconds until fragrant.


6. Combine everything

Return green beans to the pan and toss with the chicken.


7. Create the savory glaze

  1. Pour the prepared sauce mixture into the pan.

  2. Sprinkle xanthan gum slowly while stirring to prevent clumps.

  3. Cook for 1–2 minutes until the sauce thickens and coats the chicken and beans.


8. Finish the dish

Add sliced green onions and toss everything together.


Garnish

Top with:

  • Sesame seeds

  • Chili flakes

  • Extra green onions
