Keto Marry Me Chicken

 Ingredients

Chicken

  • 4 boneless skinless chicken breasts (6–7 oz each)

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp garlic powder

  • ½ tsp paprika

  • 2 tbsp olive oil or avocado oil


Creamy “Marry Me” Sauce

  • 2 tbsp unsalted butter

  • 4 cloves garlic, minced

  • ¾ cup heavy cream

  • ½ cup chicken broth

  • ½ cup freshly grated parmesan cheese

  • ⅓ cup sun-dried tomatoes (oil-packed, drained & chopped)

  • 1 tsp Italian seasoning

  • ½ tsp crushed red pepper flakes (optional)

  • ½ tsp onion powder

  • Salt & pepper to taste


Optional Add-Ins (Keto-Friendly)

  • ½ cup baby spinach

  • 1 tbsp fresh basil or parsley (for garnish)


 Prep (Important for Juicy Chicken)

  1. Pat chicken dry.

  2. If thick, slice breasts horizontally to even thickness.

  3. Season both sides with salt, pepper, garlic powder, and paprika.


 Sear the Chicken

  1. Heat oil in a large skillet over medium-high heat.

  2. Add chicken and sear 4–5 minutes per side until golden.

  3. Remove chicken to a plate (it will finish cooking later).

Tip: Don’t crowd the pan—sear in batches if needed.


 Build the Sauce

  1. Reduce heat to medium.

  2. Add butter to the same pan.

  3. Stir in garlic; sauté 30 seconds (don’t brown).

  4. Add chicken broth and scrape up browned bits.

  5. Pour in heavy cream and stir.

  6. Add parmesan, Italian seasoning, red pepper flakes, and onion powder.

  7. Simmer 3–5 minutes, stirring, until slightly thickened.

  8. Stir in sun-dried tomatoes.


 Finish Cooking

  1. Return chicken (and juices) to the skillet.

  2. Spoon sauce over chicken.

  3. Simmer uncovered 8–10 minutes, until chicken reaches 165°F.

  4. Add spinach if using—let wilt.

  5. Taste and adjust seasoning.


 Serve

  • Garnish with fresh basil or parsley

  • Extra parmesan on top is encouraged 😌
