Prep (Important for Juicy Chicken)
-
Pat chicken dry.

If thick, slice breasts horizontally to even thickness.

Sear the Chicken
-
Heat oil in a large skillet over medium-high heat.
-
Add chicken and sear 4–5 minutes per side until golden.

Tip: Don’t crowd the pan—sear in batches if needed.
Build the Sauce
-
Reduce heat to medium.
-
Add butter to the same pan.
-
Stir in garlic; sauté 30 seconds (don’t brown).
-
Add chicken broth and scrape up browned bits.

Simmer 3–5 minutes, stirring, until slightly thickened.

Simmer uncovered 8–10 minutes, until chicken reaches 165°F.
-
Add spinach if using—let wilt.
-
Taste and adjust seasoning.
Serve
-
Garnish with fresh basil or parsley
-
Extra parmesan on top is encouraged 😌
Pro Tips for Best Flavor
-
Use oil-packed sun-dried tomatoes (not dry)
-
Grate parmesan fresh—pre-shredded won’t melt smoothly
