Keto Mexican Wedding Cookies

🍪 Ingredients (makes ~16 cookies)

  • 1½ cups almond flour

  • ¼ cup powdered erythritol or monk fruit sweetener

  • ½ cup butter, softened

  • ½ cup finely chopped pecans or walnuts

  • 1 tsp vanilla extract

  • ¼ tsp salt

For coating (optional):

  • ¼ cup powdered erythritol


🍳 Instructions

  1. Preheat oven
    Preheat to 165°C / 325°F. Line a baking tray with parchment paper.

  2. Cream butter
    In a bowl, beat butter and powdered sweetener until light and fluffy.

  3. Mix dough
    Add vanilla and salt.
    Stir in almond flour and chopped nuts to form a soft dough.

  4. Shape cookies
    Roll dough into small balls (about 1 tbsp each) and place on tray.

  5. Bake
    Bake for 12–15 minutes until just set (do not brown).

  6. Cool & coat
    Let cookies cool completely, then gently roll in powdered erythritol if desired.
