Keto Mexican Wedding Cookies
🍪 Ingredients (makes ~16 cookies)

1½ cups almond flour

¼ cup powdered erythritol or monk fruit sweetener

½ cup butter, softened

½ cup finely chopped pecans or walnuts

1 tsp vanilla extract

¼ tsp salt
For coating (optional):

¼ cup powdered erythritol
🍳 Instructions

Preheat oven
Preheat to 165°C / 325°F. Line a baking tray with parchment paper. -
Cream butter
In a bowl, beat butter and powdered sweetener until light and fluffy. -
Mix dough
Add vanilla and salt.
Stir in almond flour and chopped nuts to form a soft dough. -
Shape cookies
Roll dough into small balls (about 1 tbsp each) and place on tray. -
Bake
Bake for 12–15 minutes until just set (do not brown). -
Cool & coat
Let cookies cool completely, then gently roll in powdered erythritol if desired.
