Keto Seafood Mac and Cheese is a rich, creamy, and indulgent dish that brings together succulent seafood with cheesy, low-carb “noodles,” perfect for a comforting keto-friendly dinner. Traditional mac and cheese is off-limits on keto because of the pasta, but this version uses shirataki noodles, zucchini noodles, or even cauliflower to mimic that classic texture without the carbs. Combined with a velvety cheese sauce and tender shrimp, crab, or scallops, it’s a decadent, restaurant-quality meal you can enjoy at home.

The magic of this dish lies in its creamy, cheesy sauce. A blend of cream cheese, heavy cream, and shredded cheddar or Gruyère creates a luscious coating for the seafood and noodles. Garlic, Dijon mustard, and a hint of paprika add depth of flavor, while a little Parmesan on top adds a golden, slightly crisp finish. The seafood is lightly sautéed before being mixed with the sauce, ensuring it stays tender and flavorful. Each bite delivers the perfect combination of richness, cheesy goodness, and a hint of ocean freshness.

This Keto Seafood Mac and Cheese is not only low-carb but also versatile. You can swap in different seafood depending on your preference or what’s available—shrimp, scallops, lobster, or crab all work beautifully. It reheats well for leftovers, and you can even bake it for a few minutes under the broiler to get a crisp, golden topping. This dish is perfect for a special occasion, date night, or anytime you want a luxurious, keto-compliant comfort food.

Keto Seafood Mac and Cheese Recipe

Ingredients (serves 2–3):

  • 8 oz shirataki noodles (or zucchini noodles/cauliflower florets)

  • 1 tbsp butter

  • 1 clove garlic, minced

  • ½ lb shrimp, peeled and deveined

  • ½ cup crab meat (optional)

  • ½ cup heavy cream

  • 4 oz cream cheese, softened

  • 1 cup shredded cheddar cheese (or Gruyère)

  • ¼ cup grated Parmesan cheese

  • 1 tsp Dijon mustard

  • ½ tsp paprika

  • Salt and pepper, to taste

  • 2 tbsp chopped fresh parsley, for garnish

Instructions:

  1. Prepare noodles: If using shirataki noodles, rinse well and boil or sauté according to package instructions. If using zucchini noodles, lightly sauté for 2–3 minutes until tender but firm. For cauliflower, steam until slightly tender. Set aside.

  2. Cook seafood: In a large skillet, melt butter over medium heat. Add garlic and sauté 30 seconds until fragrant. Add shrimp (and optional crab) and cook 2–3 minutes until just cooked through. Remove from skillet and set aside.

  3. Make cheese sauce: In the same skillet, add heavy cream and cream cheese. Stir over medium heat until smooth and creamy. Mix in cheddar, Parmesan, Dijon mustard, paprika, salt, and pepper. Stir until cheese is fully melted.

  4. Combine: Add cooked noodles and seafood to the sauce, stirring gently to coat evenly. Cook another 1–2 minutes to heat through.

  5. Serve: Garnish with fresh parsley and extra Parmesan if desired. Serve immediately.
