Ingredients

Turkey Filling

  • 1 lb (450 g) lean ground turkey (93%–99% lean)
  • 1 tbsp olive oil or cooking spray
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp tomato paste
  • 1/2 cup water or low-sodium broth

Seasonings

  • 1 1/2 tbsp taco seasoning (low-sugar if possible)
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp oregano
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • Optional: pinch cayenne for heat

Lettuce Wraps

  • 1 large head romaine lettuce or butter lettuce
  • Or 8–10 large lettuce leaves, washed and dried

Fresh Salsa

  • 1 cup diced tomatoes
  • 1/4 cup red onion, finely chopped
  • 1 small jalapeño, minced (optional)
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp lime juice
  • Salt to taste

Optional Toppings

  • Fat-free or light Greek yogurt (as sour cream substitute)
  • Avocado slices
  • Shredded lettuce or cabbage
  • Hot sauce
  • Lime wedges

Instructions

Step 1: Prepare the Salsa

  1. Combine tomatoes, onion, jalapeño, cilantro, and lime juice in a bowl.
  2. Add salt to taste.
  3. Mix and set aside to let flavors blend.

Step 2: Cook the Turkey

  1. Heat olive oil or spray a large skillet over medium heat.
  2. Add onion and cook 2–3 minutes until soft.
  3. Add garlic and cook 30 seconds.

Step 3: Brown the Turkey

  1. Add ground turkey to the skillet.
  2. Cook until fully browned, breaking it apart as it cooks.

Step 4: Season the Filling

Add:

  • Taco seasoning
  • Cumin
  • Smoked paprika
  • Chili powder
  • Oregano
  • Salt and pepper
  • Tomato paste

Stir well.


Step 5: Simmer

  1. Add water or broth.
  2. Stir and simmer 5–7 minutes until slightly thickened and flavorful.
  3. Adjust seasoning to taste.

Step 6: Prepare Lettuce Wraps

  1. Wash lettuce leaves and pat dry.
  2. Keep leaves whole to form “cups.”

Step 7: Assemble Wraps

  1. Spoon turkey mixture into lettuce leaves.
  2. Top with fresh salsa.
  3. Add optional toppings like yogurt or avocado.
