These are cheesy, spicy, low-carb pizza rolls filled with Cajun blackened chicken and creamy Alfredo sauce, wrapped in a keto-friendly dough or cheese-based wrap, then baked or air-fried until golden and crisp.

Ingredients

Cajun Blackened Chicken

  • 2 cups cooked chicken breast, shredded or finely chopped
  • 1 tbsp olive oil or butter
  • 1 1/2 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • Optional: pinch cayenne for heat

Low-Carb Dough Option (Choose One)

Option 1: Fathead Dough (Best Texture)

  • 1 1/2 cups shredded mozzarella cheese
  • 2 tbsp cream cheese
  • 3/4 cup almond flour
  • 1 egg
  • 1/2 tsp baking powder

Option 2: Cheese Wrap Shortcut

  • Low-carb tortillas or egg wraps (simplest version)

Alfredo Filling

  • 1/2 cup heavy cream
  • 2 tbsp cream cheese
  • 1/3 cup grated Parmesan cheese
  • 1 tbsp butter
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Cheese & Assembly

  • 1 cup shredded mozzarella (for inside rolls)
  • 1/4 cup Parmesan (optional topping)
  • Fresh parsley (optional garnish)

  • Olive oil spray or melted butter

Instructions

Step 1: Cook Cajun Chicken

  1. Heat oil in skillet over medium-high heat.
  2. Add chicken and Cajun seasoning.
  3. Stir and cook 3–5 minutes until well coated and slightly crispy at edges.
  4. Set aside.

Step 2: Make Alfredo Sauce

  1. In a small pan over medium heat, melt butter.
  2. Add cream and cream cheese.
  3. Whisk until smooth.
  4. Add Parmesan, garlic powder, salt, and pepper.
  5. Simmer 2–3 minutes until thick and creamy.
  6. Remove from heat.

Step 3: Prepare Dough (Fathead Method)

  1. Melt mozzarella and cream cheese together (microwave or stovetop).
  2. Stir until smooth.
  3. Mix in almond flour, egg, and baking powder.
  4. Knead into a soft dough.

Let cool slightly so it’s easier to handle.


Step 4: Roll Out Dough

  1. Place dough between parchment paper sheets.
  2. Roll into a rectangle (about 1/4 inch thick).
  3. Cut into 10–12 small rectangles.

Step 5: Fill the Rolls

For each piece:

  • Add a spoon of Cajun chicken
  • Add a small spoon of Alfredo sauce
  • Sprinkle mozzarella cheese

Roll tightly and pinch edges closed.


Step 6: Air Fry or Bake

Air Fryer Method (Best Crispiness)

  • Preheat: 375°F (190°C)
  • Cook: 8–10 minutes
  • Flip halfway through
  • Lightly brush with butter or oil for golden finish

Oven Method

  • Bake at 400°F (200°C)
  • Cook 12–15 minutes until golden

Step 7: Finish & Serve

  • Brush with melted butter or garlic butter
  • Sprinkle Parmesan and parsley
  • Serve warm with extra Alfredo for dipping

Variations

Spicy Cajun Kick

  • Add extra cayenne or hot sauce to chicken

Buffalo Alfredo Version

  • Mix buffalo sauce into Alfredo
