Makes: 15 patties
Serving size: 1 patty
Estimated WW Points: 2–3 points per patty (depending on brands used)
INGREDIENTS
• 1.1 lb ground chicken breast
• 1 cup mashed sweet potato (cooked)
• ½–¾ cup finely chopped red onion
• 2 tsp minced garlic
• 2 tbsp fresh parsley, chopped
• 2 tbsp fresh basil, chopped
• 1 large egg
• 1 cup panko breadcrumbs
•2 tbsp grated parmesan cheese
• Salt & pepper, to taste
• 2 tsp olive oil (for cooking)
• Optional for serving: light sweet chili sauce
INSTRUCTIONS
In a large bowl, combine ground chicken, mashed sweet potato, onion, garlic, parsley, basil, egg, breadcrumbs, parmesan, salt, and pepper. Mix until well combined.
Shape mixture into 15 small patties.
Heat 1 teaspoon olive oil in a non-stick skillet over medium heat.
Cook half the patties for about 5 minutes per side, until golden brown and cooked through.
Repeat with remaining oil and patties.
Serve warm. Optional: drizzle with a little light sweet chili sauce or enjoy in lettuce wraps, on a bun, or with a side salad.

• Points mainly come from breadcrumbs, parmesan, olive oil, and any sauce used
• For lower points:
– Use cooking spray instead of oil
– Skip or lightly drizzle sauce
– Use reduced-fat parmesan
