🍝 Pasta with Vegan White Sauce

Ingredients

  • 250 g pasta (penne, fettuccine, or spaghetti)

  • 2 tbsp olive oil or vegan butter

  • 2 cloves garlic, minced

  • 2 tbsp flour

  • 1½ cups unsweetened plant milk (soy or oat works best)

  • 2 tbsp nutritional yeast (for cheesy flavor)

  • Salt & black pepper to taste

  • ½ tsp garlic powder (optional)

  • ½ tsp dried oregano or Italian seasoning

  • Vegetables of choice (mushrooms, broccoli, spinach, peas – optional)

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.

  2. In a pan, heat olive oil over medium heat. Add garlic and sauté 30 seconds.

  3. Add flour and stir continuously for 1 minute.

  4. Slowly whisk in plant milk until smooth.

  5. Cook until sauce thickens (3–5 minutes).

  6. Stir in nutritional yeast, salt, pepper, and herbs.

  7. Add vegetables (if using) and cook until tender.

  8. Toss in cooked pasta and mix well.
