Ingredients

For the Prime Rib:

  • 1 (4–6 lb) bone-in or boneless prime rib roast
  • 2 tbsp olive oil or softened butter
  • 3–4 cloves garlic, minced
  • 2 tbsp coarse black pepper (adjust to taste)
  • 1 tbsp kosher salt
  • 1 tbsp fresh rosemary, finely chopped (or 1 tsp dried)
  • 1 tbsp fresh thyme, finely chopped (or 1 tsp dried)
  • 1/2 cup grated Parmesan cheese
  • Optional: 1 tsp Dijon mustard (helps the crust stick and adds depth)

Instructions

1. Prepare the Roast

  • Bring the prime rib to room temperature (let sit out 1–2 hours before roasting).
  • Preheat your oven to 450°F (230°C).
  • Pat the roast dry with paper towels.

2. Make the Pepper Parmesan Crust

  • In a small bowl, combine olive oil or butter, garlic, black pepper, salt, herbs, and Parmesan.
  • Rub the mixture generously all over the roast. Optionally, smear a thin layer of Dijon mustard on the roast before applying the rub.

3. Roast

  • Place roast on a rack in a roasting pan, fat-side up.
  • Roast at 450°F for 20 minutes to develop a crust.
  • Reduce oven temperature to 325°F (165°C) and continue roasting until the internal temperature reaches:
    • 120°F (49°C) for rare
    • 130°F (54°C) for medium-rare
    • 135°F (57°C) for medium
