Potato Pancakes

🥔 Vegan Potato Pancakes (Crispy & Simple)

🧺 Ingredients

  • 3 large potatoes, peeled

  • 1 small onion

  • 2–3 tbsp all-purpose flour (or chickpea flour)

  • 1 tbsp cornstarch (extra crispiness)

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ tsp garlic powder (optional)

  • Oil, for frying


🥣 Instructions

  1. Grate potatoes and onion.

  2. Squeeze out liquid very well using a clean cloth.

  3. Transfer to a bowl; add flour, cornstarch, salt, pepper, and garlic powder.

  4. Mix until the batter just holds together.

  5. Heat a thin layer of oil in a pan over medium-high heat.

  6. Scoop batter, flatten slightly, and pan-fry 3–4 minutes per side until golden and crisp.

  7. Drain on paper towels.


✨ Tips for Extra Crisp

  • The drier the potatoes, the crispier the pancakes.

  • Use starchy potatoes (like Russet).

  • Don’t overcrowd the pan.

  • Vegan sour cream or cashew yogurt

  • Applesauce (classic!)

  • Chopped herbs + lemon

  • Spicy ketchup or chili sauce
