🥔 Roasted Sausages & Potatoes
🧄 Ingredients

1 lb (450g) sausages (pork, chicken, turkey, or veggie — your choice)

1 ½ lbs (700g) baby potatoes or russet potatoes, cut into 1-inch chunks

1 large onion, sliced (yellow or red)

1–2 bell peppers, sliced (optional for color & sweetness)

3 tablespoons olive oil

1 teaspoon garlic powder (or 3 minced garlic cloves)

1 teaspoon dried oregano or Italian seasoning

½ teaspoon smoked paprika (optional but adds depth)

Salt & pepper to taste

Fresh herbs for garnish (parsley, thyme, or rosemary)
🔪 Instructions

Preheat oven:
Set to 400°F (200°C). -
Prep ingredients:
Wash and cut the potatoes. Slice onions and peppers. If sausages are thick, you can prick them with a fork or cut them into large chunks. -
Season potatoes & veggies:
In a large bowl, toss potatoes, onions, and peppers with olive oil, garlic, herbs, paprika, salt, and pepper until evenly coated. -
Arrange on a baking sheet:
Spread the seasoned potatoes and veggies on a large baking pan lined with parchment paper. Place sausages on top or nestled between them. -
Roast:
Bake for 35–45 minutes, turning halfway through.-
Potatoes should be golden and crisp.

Sausages should be browned and cooked through (internal temp: 160°F/71°C for pork, 165°F/74°C for chicken).

Garnish with fresh parsley or rosemary. Serve hot with mustard, ketchup, or a side salad.
