Ingredients (makes 8–10 nests)
For the Potato Base:
3 large potatoes, peeled and cut into chunks
2 tbsp butter
¼ cup milk or cream
Salt and pepper, to taste
½ tsp garlic powder (optional)
1 egg (to help hold the shape)
For the Filling (choose your favorite combo):
½ cup shredded mozzarella or cheddar cheese
¼ cup cooked bacon bits or diced ham
¼ cup corn or peas (optional)
2 tbsp chopped green onions or parsley
For Topping:
Extra cheese for melting on top
Optional: a sprinkle of paprika or herbs
1. Prepare the Mashed Potatoes
Boil potatoes in salted water until tender (about 15 minutes).
Drain, then mash with butter, milk, salt, pepper, and garlic powder.
Let them cool slightly, then stir in the egg until smooth and creamy.
2. Shape the Nests
Preheat oven to 400°F (200°C).
Line a baking sheet with parchment paper or lightly grease a muffin tin.
Scoop the mashed potatoes into mounds (about 2–3 tablespoons each).
Use a spoon to press the center of each mound and create a “nest” shape.
3. Add the Filling
Fill each nest with cheese, bacon (or veggies), and herbs.
Sprinkle extra cheese on top if you like it extra melty!
4. Bake
Bake for 15–20 minutes, until the edges are golden and the cheese is bubbly.
5. Serve
Garnish with chopped parsley or green onions.
Serve warm as a snack, appetizer, or side dish.
