Vegan cheesy cauliflower bites are a deliciously crispy snack that combines the natural sweetness of cauliflower with a savory, cheesy flavor entirely plant-based. Each bite is coated in a spiced chickpea flour batter, baked until golden and crisp on the outside while remaining tender on the inside. The nutritional yeast gives a rich, cheesy taste without any dairy, making these bites satisfying and flavorful.

The seasoning blend, including garlic, onion, smoked paprika, and a hint of turmeric, enhances the cauliflower’s natural flavor while adding warmth and depth. A drizzle of olive oil before baking helps achieve a golden, slightly crunchy exterior that makes each piece irresistible. The result is a perfect balance of textures: crispy edges with a soft, creamy center.

These bites are versatile and perfect for snacking, as a party appetizer, or a side dish alongside a fresh salad or dipping sauce. Vegan ranch, spicy ketchup, or a simple vegan mayo dip pair beautifully, elevating the flavor and adding a creamy contrast to the crispiness. They are easy to prepare yet impressive enough to serve to guests.

Beyond taste, vegan cheesy cauliflower bites are a wholesome, nourishing treat. Cauliflower is packed with fiber and vitamins, while the chickpea flour adds protein, making this snack both indulgent and guilt-free. They’re a crowd-pleasing, plant-based alternative to traditional fried snacks, delivering comfort, flavor, and fun in every bite.

Cook Time

25–30 minutes

Ingredients

  • 1 medium head cauliflower, cut into bite-sized florets

  • ½ cup unsweetened plant milk (soy, oat, or almond)

  • ½ cup chickpea flour (or all-purpose flour for non-gluten-free version)

  • ¼ cup nutritional yeast (for cheesy flavor)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp smoked paprika

  • ¼ tsp turmeric (optional, for color)

  • Salt & black pepper, to taste

  • 2–3 tbsp olive oil (or avocado oil), for brushing

  • Optional: 1 tsp Dijon mustard or hot sauce for extra flavor

Optional Dipping Sauce

  • Vegan ranch, vegan mayo, or ketchup

Instructions

1. Preheat & Prepare

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper. Wash and cut the cauliflower into bite-sized florets.

2. Make the Batter

In a large bowl, whisk together plant milk, chickpea flour, nutritional yeast, garlic powder, onion powder, smoked paprika, turmeric, salt, and pepper until smooth. The batter should be thick enough to coat the florets but still pourable.

3. Coat the Cauliflower

Toss the cauliflower florets in the batter until fully coated. Arrange them on the prepared baking sheet in a single layer. Drizzle or brush lightly with olive oil.

4. Bake

Bake for 20–25 minutes, flipping halfway through, until the cauliflower is golden brown and crispy on the edges. For extra crispiness, broil for 2–3 minutes at the end.

5. Serve

Serve hot with your favorite vegan dipping sauce and garnish with fresh parsley or a sprinkle of nutritional yeast for extra “cheese” flavor.
