Vegan Sweet Potato Brownies

Ingredients

  • 1 cup cooked and mashed sweet potato (about 1 medium sweet potato)

  • ½ cup almond butter or peanut butter

  • ½ cup maple syrup or agave nectar

  • 1 tsp vanilla extract

  • ½ cup unsweetened cocoa powder

  • ½ cup almond flour (or oat flour for lighter texture)

  • 1 tsp baking powder

  • ¼ tsp salt

  • ½ cup vegan chocolate chips (optional)


Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.

  2. Prepare the batter
    In a large bowl, mix mashed sweet potato, almond butter, maple syrup, and vanilla until smooth. Sift in cocoa powder, almond flour, baking powder, and salt, and stir until fully combined. Fold in chocolate chips if using.

  3. Bake
    Pour the batter into the prepared pan and smooth the top. Bake for 25–30 minutes, or until a toothpick inserted comes out mostly clean. Be careful not to overbake — they should remain fudgy.

  4. Cool & serve
    Let the brownies cool completely before slicing. They can be served as-is, or topped with vegan whipped cream or a dusting of cocoa powder.
