Vegan Zucchini Lasagna Rolls (Detailed Recipe)

Ingredients

Zucchini Rolls

  • 3 large zucchini

  • 1 tbsp olive oil

  • ¼ tsp salt

  • ¼ tsp black pepper


Vegan Ricotta Filling

  • 1½ cups firm tofu, drained

  • 3 tbsp nutritional yeast

  • 2 tbsp lemon juice

  • 1 clove garlic, minced

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp dried oregano

  • 2 tbsp chopped fresh basil or parsley

Optional:

  • ½ cup finely chopped spinach


Tomato Sauce

  • 2 cups marinara sauce (store-bought or homemade)

  • ½ tsp dried basil

  • ½ tsp dried oregano

  • ¼ tsp chili flakes (optional)


Topping (Optional)

  • 2 tbsp nutritional yeast

  • Vegan shredded cheese (optional)

  • Fresh basil for garnish


Equipment

  • Baking dish

  • Knife or vegetable peeler

  • Mixing bowl

  • Blender or food processor

  • Baking sheet


Step-by-Step Instructions

1. Prepare the Zucchini

  1. Wash the zucchini.

  2. Slice lengthwise into thin strips using a knife or vegetable peeler.

  3. Try to make slices about 3 mm thick.

You should get 4–5 slices per zucchini.


2. Pre-Cook the Zucchini

  1. Preheat oven to 190°C (375°F).

  2. Place zucchini slices on a baking sheet.

  3. Brush lightly with olive oil and sprinkle with salt and pepper.

  4. Bake for 8–10 minutes until slightly soft.

This helps them roll without breaking.


3. Make the Vegan Ricotta Filling

In a blender or food processor combine:

  • tofu

  • nutritional yeast

  • lemon juice

  • garlic

  • salt

  • black pepper

  • oregano

Blend until smooth but slightly textured.

Transfer to a bowl and mix in:

  • chopped herbs

  • spinach (optional)


4. Prepare the Baking Dish

  1. Spread ½ cup marinara sauce on the bottom of the baking dish.

  2. This prevents the rolls from sticking.


5. Assemble the Zucchini Rolls

  1. Lay one zucchini slice flat.

  2. Spread 1–2 tablespoons of ricotta filling along the slice.

  3. Roll it from one end to the other.

  4. Place the roll seam side down in the baking dish.

Repeat until all slices are filled.


6. Add Sauce and Toppings

  1. Pour remaining marinara sauce over the rolls.

  2. Sprinkle with:

    • nutritional yeast

    • vegan cheese (optional)


7. Bake

Bake in the oven for 20–25 minutes until the sauce is bubbling and the rolls are heated through.


8. Serve

Garnish with fresh basil and serve warm.
