Ingredients

For the CookiesChristmas cookie decorations

1 cup all-purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
Pinch of salt
3 tbsp light butter (I Can’t Believe It’s Not Butter Light / Country Crock Light)
1/3 cup granulated sugar substitute (like Swerve or Monkfruit)
1 egg
1 tsp vanilla extract
1 tbsp unsweetened applesauce (keeps them soft + reduces points)
For the Low-Point Frosting

1/2 cup plain nonfat Greek yogurt
2 tbsp sugar-free powdered sweetener (Swerve/Monkfruit)
1/2 tsp vanilla extract
Optional: a few drops food coloring
Optional: light Christmas sprinkles (very small amount—adds ~0 points if used lightly)

Instructions

1️⃣ Make the Dough

Preheat oven to 350°F (175°C).
In a bowl, whisk flour, baking powder, baking soda, and salt.
In another bowl, beat light butter and sweetener until fluffy.
Add egg, vanilla, and applesauce. Mix well.
Add dry mixture into wet mixture. Stir to form cookie dough.
Chill dough 20–30 minutes (helps shape cookies).
2️⃣ Shape & BakeBaking parchment paper

Roll small balls (about 20).
Place on a baking sheet lined with parchment.
Flatten tops gently with your fingers.
Bake 8–9 minutes, until edges are lightly golden.
Cool completely before frosting.
3️⃣ Make the Frosting

Mix Greek yogurt, powdered sweetener, and vanilla.
Add food coloring if desired.
Spread a thin layer over cooled cookies.
Add a pinch of sprinkles (optional).
