Weight Watchers Cheesy Taco Soup

This Cheesy Taco Soup is the ultimate cozy bowl of comfort — rich, creamy, and loaded with taco goodness without the guilt! It combines lean ground turkey, beans, corn, and tomatoes simmered in a spiced broth that’s both filling and full of flavor. The creamy texture comes from fat-free cream cheese or Greek yogurt, giving it that indulgent “cheesy” feel while staying low in calories. Perfect for busy weeknights or meal prep, this soup brings all the taco-night excitement to your spoon!

Ingredients:

  • 1 lb lean ground turkey (or lean ground beef, 93% or higher)

  • 1 small onion, diced

  • 1 can (15 oz) diced tomatoes with green chilies (like Rotel)

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (15 oz) corn, drained

  • 2 cups low-sodium chicken broth

  • 1 packet taco seasoning (low sodium if available)

  • ½ tsp chili powder (optional for more heat)

  • ½ cup fat-free cream cheese (softened) or ½ cup non-fat plain Greek yogurt

  • ½ cup reduced-fat shredded cheddar cheese

  • Salt and pepper to taste

Instructions:

  1. Cook the Meat:
In a large pot or Dutch oven, cook ground turkey and diced onion over medium heat until browned. Drain any excess fat.

  2. Add Flavor:
Stir in taco seasoning and chili powder, cooking for another minute to let the spices bloom.

  3. Simmer the Soup:
Add diced tomatoes, beans, corn, and chicken broth. Stir well and bring to a simmer. Cover and cook for about 15–20 minutes.

  4. Make it Cheesy:
Reduce the heat to low. Stir in the softened cream cheese until fully melted and creamy. Add shredded cheddar and stir until smooth.

  5. Serve:
Ladle into bowls and top with your favorite low-point toppings — like diced tomatoes, fresh cilantro, a spoon of Greek yogurt, or a sprinkle of extra cheese.

Weight Watchers Points (Approximate):

  • Per 1-cup serving: 4–6 points (depending on ingredients and toppings)

  • Using fat-free Greek yogurt instead of cream cheese lowers the points further!

Tip:

This soup tastes even better the next day as the flavors deepen. Pair it with a small side salad or baked tortilla chips for a satisfying, balanced meal!
