Ingredients:

  • 1 lb lean ground turkey (or lean ground beef, 93% or higher)

  • 1 small onion, diced

  • 1 can (15 oz) diced tomatoes with green chilies (like Rotel)

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (15 oz) corn, drained

  • 2 cups low-sodium chicken broth

  • 1 packet taco seasoning (low sodium if available)

  • ½ tsp chili powder (optional for more heat)

  • ½ cup fat-free cream cheese (softened) or ½ cup non-fat plain Greek yogurt

  • ½ cup reduced-fat shredded cheddar cheese

  • Salt and pepper to taste


Instructions:

    In a large pot or Dutch oven, cook ground turkey and diced onion over medium heat until browned. Drain any excess fat.
