🛒 Ingredients:

  • 1 lb lean ground turkey or chicken (99% fat-free if possible)
  • 1 tsp olive oil
  • 2–3 cloves garlic, minced
  • 1 small onion, diced
  • 1 small green bell pepper, diced (optional but flavorful)
  • 1 (10 oz) can Rotel diced tomatoes with green chilies (or fresh chopped tomato + a dash of chili flakes)
  • 1½ cups low-sodium chicken or beef broth
  • ½ cup low-fat cream cheese or ¾ cup fat-free half & half (for lighter texture)
  • 2 tbsp taco seasoning (homemade or low-sodium packet)
  • Salt and pepper, to taste
  • Optional toppings: diced avocado, chopped cilantro, reduced-fat shredded cheese, lime wedges

🔹 Instructions:

  1. Heat oil in a large pot or Dutch oven over medium-high heat.
  2. Add ground turkey, onion, and garlic. Cook for 7–8 minutes, breaking up the meat, until browned.
  3. Add taco seasoning, bell pepper, and tomatoes. Stir and cook for another 3–4 minutes.
  4. Pour in broth and bring to a gentle simmer.
  5. Reduce heat to low and stir in low-fat cream cheese (or half & half). Mix until smooth and  creamy.
  6. Simmer for 10–15 minutes until thickened slightly.
  7. Serve hot, topped with fresh cilantro, a sprinkle of reduced-fat cheese, and a squeeze of lime.
