Weight Watchers Lemon Garlic Butter Chicken & Green Beans Skillet

Ingredients

  • 4 small boneless, skinless chicken breasts (about 1½ lbs total)

  • 1 lb fresh green beans, trimmed

  • 3 cloves garlic, minced

  • 2 tablespoons light butter (or 1 tbsp regular butter + 1 tbsp olive oil)

  • 1 tablespoon olive oil

  • Juice of 1 medium lemon

  • Zest of ½ lemon

  • ½ cup low-sodium chicken broth

  • 1 teaspoon Italian seasoning

  • ½ teaspoon paprika

  • Salt and black pepper, to taste

  • Optional: 1 tablespoon chopped fresh parsley


Instructions

1. Prepare the Chicken

  • Pat chicken breasts dry.

  • Season both sides with salt, pepper, paprika, and Italian seasoning.

2. Sear the Chicken

  • Heat olive oil in a large skillet over medium-high heat.

  • Add chicken and cook 5–6 minutes per side until golden brown and internal temperature reaches 165°F (74°C).

  • Remove chicken from skillet and set aside.

3. Cook the Green Beans

  • In the same skillet, add 1 tablespoon of the butter.

  • Add green beans and sauté for 3–4 minutes.

  • Pour in chicken broth, cover, and cook 5–6 minutes until tender-crisp.

4. Make the Lemon Garlic Butter Sauce

  • Push green beans to one side of the skillet.

  • Add remaining butter and minced garlic to the empty space.

  • Cook garlic for 30–60 seconds until fragrant (do not burn).

  • Stir in lemon juice and zest.

5. Combine Everything

  • Return chicken to the skillet.

  • Spoon sauce over the chicken.

  • Simmer together for 2–3 minutes to blend flavors.

6. Finish & Serve

  • Sprinkle with fresh parsley if desired.

  • Serve immediately.
