Weight Watchers Taco Casserole

Ingredients

Main Ingredients

  • 1 lb lean ground turkey (93–99% lean)

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 packet taco seasoning (or homemade)

  • ½ cup water

Vegetables & Beans

  • 1 (15 oz) can black beans, drained and rinsed

  • 1 cup corn kernels (fresh, frozen, or canned)

  • 1 (10 oz) can diced tomatoes with green chilies

  • 1 cup diced bell peppers

Base Layer

  • 6 small corn tortillas, cut into strips
    (or baked tortilla chips for extra crunch)

Cheese

  • ¾ cup shredded reduced-fat Mexican blend cheese

Optional Toppings

  • Chopped lettuce

  • Diced tomatoes

  • Fresh cilantro

  • Sliced jalapeños

  • Plain non-fat Greek yogurt (as a sour cream substitute)

  • Salsa


Instructions

1. Preheat oven

Preheat oven to 375°F (190°C) and lightly spray a 9×13 inch baking dish with cooking spray.


2. Cook the meat mixture

  1. Heat a large skillet over medium heat.

  2. Add ground turkey and cook 5–6 minutes, breaking it apart.

  3. Add onion and cook 3 minutes until softened.

  4. Stir in garlic and cook 30 seconds.


3. Add seasoning and vegetables

  1. Stir in taco seasoning and ½ cup water.

  2. Add black beans, corn, diced tomatoes with chilies, and bell peppers.

  3. Simmer 4–5 minutes until slightly thickened.


4. Assemble the casserole

  1. Spread half the tortilla strips across the bottom of the baking dish.

  2. Add half of the meat mixture.

  3. Sprinkle ⅓ of the cheese.

  4. Repeat layers with remaining tortillas and meat mixture.

  5. Top with remaining cheese.


5. Bake

Bake uncovered for 20–25 minutes until hot and bubbly and the cheese is melted.

Let rest 5 minutes before serving.


Serving

Cut into portions and top with:

  • shredded lettuce

  • salsa

  • cilantro

  • Greek yogurt
