WW Mediterranean Ground Beef Skillet
A lighter Mediterranean-style skillet meal packed with lean ground beef, vegetables, herbs, and feta cheese. This one-pan recipe is filling, flavorful, and Weight Watchers–friendly.

Main Skillet
- 1 lb lean ground beef (93% lean recommended)
- 1 tbsp olive oil
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 zucchini, chopped
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1 cup baby spinach
- ½ cup canned chickpeas, drained and rinsed
- ¼ cup Kalamata olives, sliced
- 1 tsp dried oregano
- ½ tsp paprika
- ½ tsp cumin
- Salt, to taste
- Black pepper, to taste
Finishing
- ¼ cup crumbled feta cheese
- 1 tbsp fresh parsley, chopped
- Fresh lemon wedges for serving
Equipment
- Large skillet or sauté pan
- Wooden spoon or spatula
- Knife and cutting board
Instructions
1. Cook the Ground Beef
Heat olive oil in a large skillet over medium heat.
Add:
- onion
- garlic
Cook for:
- 2–3 minutes
Add ground beef and cook until browned, breaking it apart with a spoon.
Cook for:
- 6–8 minutes
Drain excess grease if necessary.
2. Add Vegetables
Stir in:
- zucchini
- bell pepper
Cook for:
- 4–5 minutes
Until slightly softened but still firm.
3. Season the Skillet
Add:
- oregano
- paprika
- cumin
- salt
- pepper
Mix well to coat everything evenly.
4. Add Remaining Ingredients
Stir in:
- cherry tomatoes
- chickpeas
- olives
Cook for:
- 3–4 minutes
Add spinach and cook until wilted.
5. Finish the Dish
Turn off heat.
Top with:
- feta cheese
- parsley
Serve with fresh lemon wedges.
