Ingredients:

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (15 oz) black-eyed peas, drained and rinsed

  • 1 cup corn kernels (fresh or canned)

  • 1 red bell pepper, diced

  • 1 yellow bell pepper, diced

  • 1 small red onion, finely chopped

  • 2 Roma tomatoes, diced

  • 1 jalapeño pepper, minced (optional)

  • ¼ cup fresh cilantro, chopped

  • Juice of 1–2 limes

  • 2 tbsp apple cider vinegar

  • ½ tsp garlic powder

  • ½ tsp chili powder

  • Salt and pepper to taste


Instructions:

  2. In a small bowl, whisk together lime juice, apple cider vinegar, garlic powder, chili powder, salt, and pepper.
