Ingredients (4 servings)

  • 3 medium russet potatoes, cut into wedges

  • 1 tablespoon olive oil (or 1 ½ teaspoons for lower points)

  • 2 tablespoons grated Parmesan cheese

  • 2 teaspoons garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon paprika

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • Cooking spray

  • Optional garnish: chopped parsley or a sprinkle of extra parmesan

Instructions

  1. Prep the potatoes
Preheat your oven to 425°F (220°C).
Scrub potatoes and cut each into 6–8 thick wedges.

  2. Season the wedges
In a large bowl, toss the wedges with olive oil until lightly coated.
Add parmesan, garlic powder, onion powder, paprika, salt, and pepper. Toss again to coat evenly.

  3. Arrange for maximum crispiness
Line a baking sheet with parchment or foil and spray lightly with cooking spray.
Spread the wedges out in a single layer, cut side down if possible.

  4. Bake
Bake for 20 minutes, flip each wedge, then bake another 15–20 minutes until golden brown and crispy.

  5. Serve
Sprinkle with fresh parsley or extra parmesan if desired. Enjoy hot!
