3 medium russet potatoes, cut into wedges

1 tablespoon olive oil (or 1 ½ teaspoons for lower points)

2 tablespoons grated Parmesan cheese

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

Cooking spray

Instructions

Prep the potatoes
Preheat your oven to 425°F (220°C).
Scrub potatoes and cut each into 6–8 thick wedges. -
Season the wedges
In a large bowl, toss the wedges with olive oil until lightly coated.
Add parmesan, garlic powder, onion powder, paprika, salt, and pepper. Toss again to coat evenly. -
Arrange for maximum crispiness
Line a baking sheet with parchment or foil and spray lightly with cooking spray.
Spread the wedges out in a single layer, cut side down if possible. -
Bake
Bake for 20 minutes, flip each wedge, then bake another 15–20 minutes until golden brown and crispy. -
Serve
Sprinkle with fresh parsley or extra parmesan if desired. Enjoy hot!
