Weight Watchers Cucumber Salad (Zero Points)

This bright, refreshing cucumber salad is crunchy, tangy, and perfect for snacking, meal prep, or serving alongside grilled chicken or fish. The cucumbers, onions, and peppers soak up a light vinegar dressing, making it full of flavor while still staying zero points. It’s the kind of dish you can keep in the fridge and grab anytime you need something satisfying and guilt-free.


Ingredients

  • 2–3 large cucumbers, thinly sliced

  • 1 red onion, thinly sliced

  • 1 green bell pepper, thinly sliced

  • 1 cup white vinegar

  • 1 cup water

  • 1–2 tablespoons sugar substitute (or 1–2 tsp sugar if preferred—adds points)

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • ½–1 teaspoon red pepper flakes (optional)

  • ½ teaspoon garlic powder

  • ½ teaspoon dried dill (optional but delicious)


Instructions

  1. Prep the vegetables
    Slice cucumbers, red onion, and bell pepper thinly and layer them into a clean jar or container (like the one in your photo).

  2. Make the dressing
    In a bowl, whisk together vinegar, water, sweetener, salt, pepper, garlic powder, dill, and red pepper flakes.

  3. Pour over vegetables
    Fill the jar with the dressing until everything is covered. Add more water if needed.

  4. Refrigerate
    Chill at least 2–4 hours, but overnight is best for maximum flavor.

  5. Serve
    Enjoy straight from the jar as a snack or side dish. Lasts up to 5–7 days in the fridge.
