Vegan Spinach Muffins

Ingredients

  • 1½ cups all-purpose flour

  • ¾ cup sugar (cane or coconut sugar)

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • 1 tsp cinnamon (optional)

Wet

  • 1 cup fresh spinach (packed)

  • ¾ cup plant milk (almond or oat)

  • ⅓ cup neutral oil or melted coconut oil

  • 1 tsp vanilla extract

  • 1 tbsp lemon juice or apple cider vinegar

Optional add-ins

  • Chocolate chips

  • Chopped walnuts

  • Blueberries


Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin.

  2. Blend spinach and plant milk until completely smooth and bright green.

  3. In a bowl, whisk dry ingredients.

  4. Add blended spinach mixture, oil, vanilla, and lemon juice to dry ingredients.
    Mix until just combined.

  5. Fold in any add-ins.

  6. Fill muffin cups ¾ full.

  7. Bake 18–22 minutes, until a toothpick comes out clean.

  8. Cool 5 minutes, then transfer to a rack.
