Vegan Chocolate Peanut Butter Balls

Ingredients

Peanut Butter Center

  • 1 cup natural peanut butter

  • ΒΌ cup maple syrup

  • 1 tsp vanilla extract

  • 1Β½ cups rolled oats or oat flour

Chocolate Coating

  • 1Β½ cups dairy-free chocolate chips

  • 1 tbsp coconut oil


Instructions

  1. Mix filling: Stir peanut butter, maple syrup, and vanilla until smooth.
    Add oats (or oat flour) and mix until a thick dough forms.

  2. Roll into 1-inch balls and place on a lined baking sheet.

  3. Chill 20–30 minutes until firm.

  4. Melt chocolate with coconut oil until smooth.

  5. Dip balls into chocolate, coating fully. Return to sheet.

  6. Chill again until chocolate sets.


Tips & Variations

  • Add powdered sugar for a sweeter, firmer center.

  • Mix in crushed pretzels, chia seeds, or protein powder.

  • Swap peanut butter for almond or sunflower seed butter.

  • Store in the fridge up to 1 week or freeze up to 2 months.
