Vegan Spinach Muffins
Ingredients

1½ cups all-purpose flour

¾ cup sugar (cane or coconut sugar)

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

1 tsp cinnamon (optional)
Wet
-
1 cup fresh spinach (packed)

¾ cup plant milk (almond or oat)

⅓ cup neutral oil or melted coconut oil

1 tsp vanilla extract
-
1 tbsp lemon juice or apple cider vinegar
Optional add-ins

Chocolate chips
-
Chopped walnuts
-
Blueberries
Instructions

Preheat oven to 350°F (175°C). Line a muffin tin.

Blend spinach and plant milk until completely smooth and bright green.

In a bowl, whisk dry ingredients.

Add blended spinach mixture, oil, vanilla, and lemon juice to dry ingredients.
Mix until just combined. -
Fold in any add-ins.

Fill muffin cups ¾ full.

Bake 18–22 minutes, until a toothpick comes out clean.

Cool 5 minutes, then transfer to a rack.
