Vegan Pecan Pie Bars
🧈 Shortbread Crust

1½ cups all-purpose flour

½ cup powdered sugar

¾ cup vegan butter (cold, cubed)

¼ tsp salt
Mix until crumbly. Press firmly into a lined 8×8 pan.
Bake at 350°F (175°C) for 15 minutes.
🌰 Pecan Filling

1½ cups chopped pecans

½ cup maple syrup

â…“ cup brown sugar

¼ cup coconut cream or full-fat coconut milk

2 tbsp melted vegan butter or coconut oil

2 tbsp cornstarch

1 tsp vanilla extract

¼ tsp salt
Whisk everything except pecans until smooth.
Stir in pecans.
🔥 Bake
Pour filling over warm crust.
Bake 25–30 minutes, until set and bubbly.
Cool completely, then chill 1–2 hours before slicing.
