Mediterranean Spinach & Feta Crisps

🧀 Ingredients (makes ~20 crisps)

  • 1 cup fresh spinach, finely chopped

  • ¾ cup feta cheese, crumbled

  • ¼ cup grated Parmesan (optional but adds extra crisp)

  • 1 clove garlic, minced

  • ½ tsp dried oregano

  • ¼ tsp black pepper

  • Zest of ½ lemon

  • Optional toppings: sesame seeds, chili flakes, or chopped olives


🍳 Instructions

  1. Preheat oven
    Preheat to 190°C / 375°F. Line a baking sheet with parchment paper.

  2. Mix filling
    In a bowl, combine spinach, feta, Parmesan (if using), garlic, oregano, pepper, and lemon zest.

  3. Form crisps
    Spoon small mounds (about 1 tbsp) onto the baking sheet.
    Flatten slightly and space them apart.

  4. Bake
    Bake for 12–15 minutes until golden and crisp around the edges.

  5. Cool
    Let cool for 5 minutes—they’ll firm up as they set.
