Mediterranean Spinach & Feta Crisps
🧀 Ingredients (makes ~20 crisps)

1 cup fresh spinach, finely chopped

¾ cup feta cheese, crumbled

¼ cup grated Parmesan (optional but adds extra crisp)

1 clove garlic, minced
-
½ tsp dried oregano
-
¼ tsp black pepper
-
Zest of ½ lemon

Optional toppings: sesame seeds, chili flakes, or chopped olives
🍳 Instructions

Preheat oven
Preheat to 190°C / 375°F. Line a baking sheet with parchment paper. -
Mix filling
In a bowl, combine spinach, feta, Parmesan (if using), garlic, oregano, pepper, and lemon zest. -
Form crisps
Spoon small mounds (about 1 tbsp) onto the baking sheet.
Flatten slightly and space them apart. -
Bake
Bake for 12–15 minutes until golden and crisp around the edges. -
Cool
Let cool for 5 minutes—they’ll firm up as they set.
