Vegan Lemon Curd
🌱 Ingredients

¾ cup fresh lemon juice (about 3–4 lemons)

Zest of 2 lemons

¾ cup sugar (white or cane)

¼ cup cornstarch

1 cup unsweetened plant milk (soy or almond works best)

¼ tsp turmeric (optional, just for color)

2 tbsp vegan butter or coconut cream

½ tsp vanilla extract
🍳 Instructions

Mix dry ingredients
In a saucepan, whisk sugar and cornstarch until smooth. -
Add liquids
Whisk in plant milk, lemon juice, and lemon zest. Add turmeric if using. -
Cook
Place on medium heat and cook, whisking constantly, until thick and glossy (5–7 minutes). -
Finish
Remove from heat. Stir in vegan butter (or coconut cream) and vanilla. -
Cool
Let cool, then transfer to a jar. It will thicken more as it chills.
