Vegan Lemon Curd

🌱 Ingredients

  • ¾ cup fresh lemon juice (about 3–4 lemons)

  • Zest of 2 lemons

  • ¾ cup sugar (white or cane)

  • ¼ cup cornstarch

  • 1 cup unsweetened plant milk (soy or almond works best)

  • ¼ tsp turmeric (optional, just for color)

  • 2 tbsp vegan butter or coconut cream

  • ½ tsp vanilla extract


🍳 Instructions

  1. Mix dry ingredients
    In a saucepan, whisk sugar and cornstarch until smooth.

  2. Add liquids
    Whisk in plant milk, lemon juice, and lemon zest. Add turmeric if using.

  3. Cook
    Place on medium heat and cook, whisking constantly, until thick and glossy (5–7 minutes).

  4. Finish
    Remove from heat. Stir in vegan butter (or coconut cream) and vanilla.

  5. Cool
    Let cool, then transfer to a jar. It will thicken more as it chills.
