Keto No-Bake Cottage Cheese Brownie Batter Protein Bites

🥣 Ingredients (makes ~10–12 bites)

  • ½ cup full-fat cottage cheese

  • ¼ cup almond flour

  • 2 tbsp unsweetened cocoa powder

  • 2–3 tbsp powdered erythritol or monk fruit sweetener (to taste)

  • 1 tbsp almond butter or peanut butter (no sugar)

  • ½ tsp vanilla extract

  • Pinch of salt

  • Optional: sugar-free chocolate chips or chopped nuts


🍫 Instructions

  1. Blend cottage cheese
    Blend cottage cheese until completely smooth (very important for brownie texture).

  2. Mix
    In a bowl, combine blended cottage cheese, almond flour, cocoa powder, sweetener, nut butter, vanilla, and salt.

  3. Fold add-ins
    Stir in sugar-free chocolate chips or nuts if using.

  4. Shape bites
    Scoop small portions and roll into balls.

  5. Chill
