🍰 Keto Sponge Cake
Ingredients

1½ cups almond flour

¼ cup powdered erythritol

1 tsp baking powder

Pinch of salt

3 large eggs

¼ cup melted butter or coconut oil

1 tsp vanilla extract
Instructions

Preheat oven to 175°C / 350°F.

Mix dry ingredients in a bowl.

Whisk eggs, butter, and vanilla; combine with dry mix.

Pour into a lined 8-inch pan.

Bake 15–18 minutes. Cool completely.
☕ Coffee Soak

½ cup strong brewed coffee (cooled)
-
1 tbsp powdered erythritol
Mix and set aside.
🧀 Mascarpone Cream
Ingredients

1 cup mascarpone cheese (or cream cheese)

1 cup heavy whipping cream
-
½ cup powdered erythritol
-
1 tsp vanilla extract
Instructions

Whip cream to stiff peaks.

Beat mascarpone, sweetener, and vanilla until smooth.

Gently fold whipped cream into mascarpone.
🍰 Assemble

Slice cake horizontally into 2 layers.

Brush bottom layer with coffee soak.

Spread half the mascarpone cream.

Add second layer, brush with coffee.

Top with remaining cream.
🍫 Finish

Dust with unsweetened cocoa powder

Chill 2–4 hours before serving
