Ingredients

Meatloaf Base

  • 900 g (2 lb) ground beef (80/20 or 85/15 for best flavor)

  • 1 cup shredded cheddar cheese (sharp cheddar preferred)

  • 6 slices bacon, cooked and crumbled

  • 2 large eggs

  • ½ cup almond flour

  • ¼ cup heavy cream (or unsweetened almond milk)

  • 2 tablespoons sugar-free ketchup

  • 1 tablespoon yellow mustard

  • 1 tablespoon Worcestershire sauce (sugar-free)

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

Optional Add-ins

  • ½ cup diced pickles (sugar-free)

  • 1 tablespoon pickle juice

  • 1 tablespoon chopped parsley


Instructions

Step 1: Prepare the Oven and Pan

  1. Preheat oven to 375°F (190°C).

  2. Line a loaf pan with parchment paper or lightly grease it.


Step 2: Cook the Bacon

  1. Cook bacon until crisp.

  2. Drain on paper towels and crumble.

  3. Reserve 1 tablespoon of bacon fat if desired for added flavor.


Step 3: Mix the Meatloaf

  1. In a large bowl, add ground beef, eggs, almond flour, heavy cream, ketchup, mustard, Worcestershire sauce, salt, pepper, garlic powder, and onion powder.

  2. Gently mix until just combined.

  3. Fold in cheddar cheese, crumbled bacon, and optional add-ins.

  4. Avoid overmixing to keep the meatloaf tender.


Step 4: Shape and Bake

  1. Transfer mixture to the loaf pan and gently press into shape.

  2. Optional topping: Spread an additional 2 tablespoons sugar-free ketchup over the top.

  3. Bake uncovered for 45–55 minutes, or until internal temperature reaches 160°F (71°C).


Step 5: Rest and Serve

  1. Remove from oven and let rest for 10 minutes.

  2. Slice and serve.
