Keto Meaty Cabbage Soup

🧾 Ingredients (6 servings)

  • 450–500 g ground beef (or ground chicken/turkey)

  • 2 tbsp olive oil or butter

  • 1 small onion, finely chopped (optional, for strict keto reduce or skip)

  • 3 cloves garlic, minced

  • 4 cups green cabbage, chopped

  • 1 cup cauliflower florets, chopped (adds body, optional)

  • 1 medium tomato, chopped OR ½ cup sugar-free crushed tomatoes

  • 4 cups beef broth (low-sodium, no sugar)

  • 1 tsp paprika

  • ½ tsp black pepper

  • 1 tsp salt (adjust to taste)

  • ½ tsp Italian seasoning or dried thyme

  • Optional: chili flakes, parsley


👩‍🍳 Instructions

  1. Heat oil or butter in a large pot over medium heat.

  2. Add ground meat and cook until browned.

  3. Add onion (if using) and garlic; sauté 1–2 minutes.

  4. Stir in paprika, salt, pepper, and seasoning.

  5. Add cabbage, cauliflower, and tomato.

  6. Pour in beef broth and bring to a boil.

  7. Reduce heat, cover, and simmer 20–25 minutes until cabbage is tender.

  8. Taste and adjust seasoning.

  9. Garnish with parsley and serve hot.
