Keto White Chicken Chili
🧾 Ingredients (5–6 servings)

700 g (1½ lb) boneless skinless chicken breast or thighs

2 tbsp olive oil or butter

3 cloves garlic, minced

1 small onion, finely chopped (optional; for strict keto use less)

2 cups chicken broth (no sugar added)

1 cup heavy cream

120 g cream cheese, softened

1 cup cauliflower rice (bean substitute)

1 tsp ground cumin
-
1 tsp chili powder
-
½ tsp white pepper or black pepper

1 tsp salt (adjust to taste)

½ tsp paprika

Optional: diced green chilies (sugar-free), jalapeños, cilantro

Heat oil or butter in a large pot over medium heat.

Add chicken, season lightly with salt, and sear until lightly golden.

Remove chicken and set aside.

In the same pot, sauté onion (if using) and garlic until fragrant.

Stir in cumin, chili powder, paprika, and pepper.

Add chicken broth and cauliflower rice.

Return chicken to the pot and simmer 15 minutes.
