No Sugar • No Flour • Low Carb

🧾 Ingredients (8–10 cookies)

  • 1 cup almond flour (or coconut flakes for flourless-style)

  • ¼ cup unsweetened peanut butter or almond butter

  • ¼ cup erythritol or monk fruit sweetener

  • 1 egg

  • ½ tsp baking powder

  • ½ tsp vanilla essence

  • Pinch of salt

  • Optional: sugar-free chocolate chips, chopped nuts, cinnamon

⚠️ If you want 100% flourless, use unsweetened coconut flakes or ground nuts instead of almond flour.


👩‍🍳 Instructions

  1. Preheat oven to 180°C / 350°F.

  2. Mix all ingredients in a bowl until a soft dough forms.

  3. Scoop spoonfuls onto a lined baking tray.

  4. Flatten slightly with a fork or fingers.

  5. Bake 10–12 minutes until edges are lightly golden.

  6. Cool completely—they firm up as they cool.
