Vegan Spinach Balls
🧾 Ingredients (makes ~16–18 balls)

2 cups spinach, finely chopped (fresh or frozen & well-squeezed)

½ cup breadcrumbs or rolled oats (blended)

¼ cup onion, finely chopped

2 cloves garlic, minced
-
2 tbsp nutritional yeast (optional, cheesy flavor)

2 tbsp chickpea flour or all-purpose flour
-
1 tbsp soy sauce or salt to taste

½ tsp black pepper
-
½ tsp paprika or chili flakes
-
2 tbsp fresh herbs (parsley or coriander)

1 tbsp olive oil
👩🍳 Instructions

If using fresh spinach, lightly sauté or steam, then squeeze out all excess water.

Heat oil in a pan and sauté onion and garlic until soft.

Add spinach and cook 1–2 minutes. Let cool.

Transfer mixture to a bowl and add breadcrumbs, flour, nutritional yeast, soy sauce, spices, and herbs.

Mix well and form small balls.

Cook your way:

Bake: 190°C / 375°F for 20–25 minutes, flipping halfway

Air-fry: 180°C / 360°F for 12–15 minutes

Pan-fry: shallow fry until golden on all sides
