Vegan Custard Apple Cake
🧾 Ingredients (8–10 servings)

2 medium apples, peeled & thinly sliced

1 tbsp lemon juice

1 tbsp sugar (or coconut sugar)

½ tsp cinnamon
🍰 Cake Batter

1½ cups all-purpose flour

¾ cup sugar (or coconut sugar)

1 tsp baking powder
-
½ tsp baking soda
-
¼ tsp salt
-
1 tsp cinnamon
-
½ tsp nutmeg (optional)

¾ cup plant milk (almond/soy/oat)

⅓ cup neutral oil (sunflower/canola)

1 tsp vanilla extract
-
2 tbsp apple custard powder (vegan)

2 tbsp water
👩🍳 Instructions

Prep apples
Toss apple slices with lemon juice, sugar, and cinnamon. Set aside. -
Preheat oven
180°C / 350°F. Grease or line an 8-inch pan. -
Mix dry ingredients
Whisk flour, sugar, baking powder, baking soda, salt, and spices. -
Mix wet ingredients
In another bowl, whisk plant milk, oil, vanilla.
Dissolve custard powder in water and add to wet mix. -
Combine
Add wet ingredients to dry and mix gently until just combined. -
Assemble
Pour batter into pan. Arrange apple slices on top, pressing lightly. -
Bake
Bake 40–45 minutes until golden and a toothpick comes out clean. -
Cool & serve
Cool 15 minutes before slicing.
