Vegan Custard Apple Cake

๐Ÿงพ Ingredients (8โ€“10 servings)

๐ŸŽ Apple Layer

  • 2 medium apples, peeled & thinly sliced

  • 1 tbsp lemon juice

  • 1 tbsp sugar (or coconut sugar)

  • ยฝ tsp cinnamon

๐Ÿฐ Cake Batter

  • 1ยฝ cups all-purpose flour

  • ยพ cup sugar (or coconut sugar)

  • 1 tsp baking powder

  • ยฝ tsp baking soda

  • ยผ tsp salt

  • 1 tsp cinnamon

  • ยฝ tsp nutmeg (optional)

  • ยพ cup plant milk (almond/soy/oat)

  • โ…“ cup neutral oil (sunflower/canola)

  • 1 tsp vanilla extract

  • 2 tbsp apple custard powder (vegan)

  • 2 tbsp water


๐Ÿ‘ฉโ€๐Ÿณ Instructions

  1. Prep apples
    Toss apple slices with lemon juice, sugar, and cinnamon. Set aside.

  2. Preheat oven
    180ยฐC / 350ยฐF. Grease or line an 8-inch pan.

  3. Mix dry ingredients
    Whisk flour, sugar, baking powder, baking soda, salt, and spices.

  4. Mix wet ingredients
    In another bowl, whisk plant milk, oil, vanilla.
    Dissolve custard powder in water and add to wet mix.

  5. Combine
    Add wet ingredients to dry and mix gently until just combined.

  6. Assemble
    Pour batter into pan. Arrange apple slices on top, pressing lightly.

  7. Bake
    Bake 40โ€“45 minutes until golden and a toothpick comes out clean.

  8. Cool & serve
    Cool 15 minutes before slicing.
