🌱 Vegan GF Sausage Patties

🥣 Ingredients (Makes 8–10 patties)

1½ cups cooked lentils (well-drained)

¾ cup certified GF oat flour (or ground GF oats)

¼ cup nutritional yeast

2 tbsp ground flaxseed + 5 tbsp water (flax egg)

2 tbsp olive oil
-
1 tbsp soy-free tamari or coconut aminos

¾ tsp salt
-
1 tsp smoked paprika
-
1 tsp garlic powder
-
1 tsp onion powder
-
½ tsp fennel seeds, lightly crushed

½ tsp black pepper
-
Optional: pinch of sage or chili flakes
👩🍳 Instructions

Mix flaxseed + water; rest 5 minutes to gel.

Mash lentils until mostly smooth (leave some texture).

Add flax egg, oil, tamari, and spices; mix well.

Stir in oat flour and nutritional yeast.

Chill mixture 10–15 minutes (helps binding).

Shape into small patties.

Cook:

Pan-fry: Medium heat, 3–4 min per side

Bake: 190°C / 375°F for 20–25 min, flipping once

Air-fry: 180°C / 360°F for 12–15 min

🧠 Tips

Too wet? Add 1–2 tbsp oat flour

Too dry? Splash of water or oil

Chill before cooking = better texture
