🌱 Vegan GF Sausage Patties

Plant-Based • Gluten-Free • Pan-Fry or Bake

🥣 Ingredients (Makes 8–10 patties)

  • 1½ cups cooked lentils (well-drained)

  • ¾ cup certified GF oat flour (or ground GF oats)

  • ¼ cup nutritional yeast

  • 2 tbsp ground flaxseed + 5 tbsp water (flax egg)

  • 2 tbsp olive oil

  • 1 tbsp soy-free tamari or coconut aminos

  • ¾ tsp salt

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp fennel seeds, lightly crushed

  • ½ tsp black pepper

  • Optional: pinch of sage or chili flakes


👩‍🍳 Instructions

  1. Mix flaxseed + water; rest 5 minutes to gel.

  2. Mash lentils until mostly smooth (leave some texture).

  3. Add flax egg, oil, tamari, and spices; mix well.

  4. Stir in oat flour and nutritional yeast.

  5. Chill mixture 10–15 minutes (helps binding).

  6. Shape into small patties.

  7. Cook:

    • Pan-fry: Medium heat, 3–4 min per side

    • Bake: 190°C / 375°F for 20–25 min, flipping once

    • Air-fry: 180°C / 360°F for 12–15 min


🧠 Tips

  • Too wet? Add 1–2 tbsp oat flour

  • Too dry? Splash of water or oil

  • Chill before cooking = better texture

  • 🍁 Breakfast style: add maple flavor + extra sage

  • 🌶️ Spicy: cayenne or red chili flakes

  • 🍄 Mushroom-boosted: finely chopped sautéed mushrooms
