🍞 Vegan Meatloaf
Ingredients
Loaf

1½ cups cooked lentils (brown or green, well-drained)

1 cup breadcrumbs (or oats for GF option)

½ cup finely chopped onion

2 cloves garlic, minced

½ cup grated carrot

½ cup chopped mushrooms (optional but great)

2 tbsp ground flaxseed + 5 tbsp water (flax egg)

2 tbsp tomato paste
-
2 tbsp soy sauce or tamari
-
1 tsp smoked paprika
-
1 tsp cumin
-
½ tsp black pepper
-
Salt to taste
Glaze
-
¼ cup ketchup
-
1 tbsp maple syrup or brown sugar

1 tsp mustard (optional)
Instructions

Prep flax egg
Mix flaxseed with water and rest 5 minutes. -
Cook veggies
Sauté onion and garlic in a little oil until soft. Add carrot and mushrooms; cook 3–4 minutes. -
Mix
In a bowl, mash lentils slightly. Add breadcrumbs, veggies, flax egg, tomato paste, soy sauce, and spices. Mix well. -
Shape
Press mixture firmly into a lined loaf pan. -
Glaze
Mix glaze ingredients and spread on top. -
Bake
Bake at 180°C (350°F) for 40–45 minutes. -
Rest 10 minutes before slicing (important!).
